    "Made this last night with a few additions. I made an herb butter like another reviewer and rubbed it underneath the skin. I also added in a bulb of whole garlic cloves with the potatoes. This chicken came out awesome! The brining really did the trick and kept the meat nice and juicy."

    "I made this the other night for my family and they loved it! I did make a couple changes... I used crunchy peanut butter (no chopped peanuts on hand, lite coconut milk, added some sliced carrots, and finished it with some chopped cilantro. I'll be making this recipe again, it's very quick and easy!"

    "This is such a nice alternative to regular chicken salad. The only change I made was to use 1/2 of a jalapeno, and about 1/2 of a pasilla chile, instead of straight jalapenos because my husband can't handle spicy food. We ate this salad wrapped up in tortillas with a bit of lettuce. This was a big hit with all four of my kids... no leftovers! ..."
