    "I first made these a year ago and thought the recipe was trash. I got crispy, crunchy cookies - not chewy at all. I decided to give it another go a night ago, and boy did it turn out differently. The key here is really taking them out of the oven in time. I used a small disher and my first batch went for the 14 mins - crispy and too browned. The next ones went at 8-9 mins and were perfectly chewy even 3 days later. I started the oven preheating after i mixed the dough, and only let it chill as long as it took the oven to preheat. One thing I noticed is the ones I did on my silpat stayed smaller and taller, the ones done on parchment spread out more (but not in a bad way at all) and were thinner. I thought that was kind of weird. Both tasted good! Can't wait to make it again.
