    My Journal

I have no recent activity to share.

    About Me

    Just a guy.

Grew up in the south, well Virginia (the enlightened south) around people who loved food and loved to cook. I learned how to cook from my mother. My mother taught herself how to cook. Her chief skill being improvisation. She wasn't good at everything (when making guacamole she would peel the avocados with a paring knife :/ ) but what she was good at was making do with the ingredients at hand. That is my strong point as well. I kinda like Alton Brown's approach which involves making substitutions based on chemical reasons.

    Favorite Foods

I go through phases. However, I'm always impressed with Indian cuisine, that would have to be my favorite type of food, though I don't get to eat it often nor could I if I wanted to...you know what I'm talking about.

Maki rolls are one of my favorite things to prepare/eat.

Right now I'm going through a Sicilian phase. Trying out Sicilian and Italian recipes which is a lot of fun.

Oh, I also like Thai curries. Panang curry is quite good, though I am not sufficiently skilled at making the curry paste myself I usually go to an Asian market and pick up the pre-made paste
