"YUM! I doubled the recipe and used 1.5 tsp almond extract in place of the vanilla and added about 1 cup of coconut as well. I also used egg substitute in place of the eggs. Made terrific mini-muffins and 2 smallish loaves. Thanks for the recipe!"

"I made this today with vanilla pudding mix. It had a wonderful, buttery mouth-feel. I would suggest adding some almond or vanilla flavoring if using vanilla pudding mix, and watch the consistency closely. You will probably need to add some milk. Thanks for a very easy recipe!"

"This is delicious! I used the blender to combine the wet ingredients (my kids don't like chunky stuff and decreased the sugar by 1/2 cup. I only had to bake my loaves for 55 minutes or so. Love the moist texture."
