"In general, I am not a huge fan of eggplant, but this recipe is fabulous. I really enjoy friend foods (eeek! lol, and I loved fried eggplant! "This omelette is delish!! DH and I had it for dinner two nights in a row because we liked it so much. served it with buttered chappati. "This was very enjoyable. I have a recipe similar in my recipes, but it doesnt use only water... it is cream-based. This was a nice change from that, but I will admit that I prefer the cream-based version.
