"I was looking for a cilantro lime rice that was similar to Cafe Rio's. I tried this receipe and almost through it out. It has a shockingly overpowering lime flavor. "This deserves 5 stars because it is hard to find such a simple and easy spanish rice that actually has some flavor. I took it to a family "Mexican Fiesta" themed pot luck and it was a big hit. The chili powder gives it a nice understated kick. FANTASTIC recipe!"

"My two year old daughter loved this but my husband and i didn't think it had enough of a cheese flavor. It makes a lot and we had a lot left over since it was just the three of us.
