I love to cook. I have too many cookbooks. I also love to collect cooking magazines. Even pet food cookbooks. I love to make cuisines from around the world, vegetarian, vegan, cup cakes, Ayurvedic, and healthy junk food (yes, there IS such a thing!). I consider myself a scratch cook after my maternal grandmother, who never used packaged mixes for cakes or breads. I do not like packaged or processed foods, although sometimes I'll try a recipe here that calls for them and I may even post a recipe or two myself because a photo in a magazine calls to me. Perhaps someday I will completely elimate all foods with ingredients that I can't pronounce!
I'm currently low-sodium/salt free and trying to get DH and I to adhere to the healthy-plate concept of 1/2 vegetables, 1/4 lean protein, and 1/4 starch (this is where you find potatoes and corn -- not in the veggies!). We are starting The Plan elimination diet in April 2013 as we are trying to determine our food allergies.
I also believe in the power of good nutrition to improve our health and possibly eliminate some needs for medication. I have known people, for example, who by following a healthy eating plan have lost weight and either cut-down on his/her diabetes medication or eliminated it altogether. I've even known people who have cured arthritis and other joint problems by ingesting more ginger. There are so many possibilities out there! We are just tapping the surface of how going to fast foods and packaged foods has made us -- over time -- less healthy. Cooking healthy takes time and I believe it's well worth the effort!
My DH and I have two dogs (Rico the Pomeranian and Guinness the Irish Setter) and one cat, Bouncer (in January 2013 we sadly lost our 2nd cat, Pilot, who had a very happy and long life). We live on a beautiful farm in Southern Maine. We have woods, a creek that runs through the woods, and a very large pond, although a neighbor has a small pond in the woods that I can't keep the dogs out of in the hot weather, which means maintaining my beautiful boys is extra work to keep them house-friendly.
I work a lot of hours M-F, so I do most -- if not all -- of my cooking on the weekends and holidays. I try really hard not to tag too many recipes because I never know if I also have to work weekends. If I could, I would cook everyday!
I also try to thank everybody who tries my recipes. If I don't, you can trust that I read all reviews and really appreciate the thoughts that went into your comments. I know that not all recipes appeal to all tastes. I love Dr. Oz and on one of his shows he talked about how we all have various-sized taste buds which leads us to a variety of tolerances for salty, sweet, hot, and spicy. I tend to love sweet and spicy while DH leans more to salty and hot.
