    About Me

    I'm a wife to a Honduran and a mother to two awesome kids. Trying to find recipes that suit everyone is a challenge. Sometimes I cook meals for the husband, sometimes the kids, and sometimes for me.

    Living in a hot tropical climate makes cooking a challenge because of the heat that is generated. I tend to not bake much because of it and I use the convention oven and pressure cooker a lot.

    I love fresh veggies and I enjoy a variety of flavors that my family does not like much. I like cooking from scratch when I can and I have a terrible time following any recipe to a T. I just always have to ad or change something about it to suit my taste. It's no offense to the person who submitted the recipe.

    I don't know how to cook much Honduran and decided that I don't really care for the food too much other than a few of the standard typical type food. I have a Honduran cookbook and nothing in it appeals to me much. I eat the food that the family cooks and enjoy it, but it doesn't leave me wanting to make it at home. Cow stomach soup for example. It's just nice to have someone else cook food I think - LOL!

    I avoid anything with canned soups or MSG in it. They are too expensive here anyway. I try to cook healthy but have it still be palatable. There needs to be balance with having the food be healthy and satisfying.

    There are many foods I miss about the states, but learning how to cook has helped alleviate some of those cravings.

    One challenge is finding healthy snack foods. Especially for the kids. Here in Honduras most anything that is baked and is sold in a package uses shortening. Manteca they call it. It is pure trans fats and it's totally apparent because so many people now have huge bellies where the bad fats are stored. I predict a health crisis in the next 10-20 years because of it too.

    A lot of restaurants cook with it too. It's cheap and keeps forever. Which is completely scary!

    So I try to make all those little crackers and cookies that the kids like for snacks here at home. It's a challenge, but I sleep better at night knowing they aren't eating all that garbage.

    Favorite Foods

    My favorite foods are Mediterranean, Italian, Middle Eastern, Latino (more Mexican than anything) and also a good American meal every once in a while.

    I'd cook all organic if I could, but it's difficult here in Honduras. Though the local fruits and veggies are out of this world. I just don't know if they are grown organically.
