I live in Oklahoma with my husband of almost fifteen years, our 13 year-old son and our recent addition...our 9 1/2 month old son, who was quite a surprise, but absolutely a wonderful blessing! The two big guys rule the "test kitchen" of our home, but thankfully they aren't too hard to please. Cooking and baking for my guys is something I really enjoy.
Besides cooking and baking, I like to collect cookbooks, especially those with good, down-home country cooking recipes, the telephone pioneer cookbooks and church/school fundraiser cookbooks. I found Recipezaar six years ago and now I use it more than any of my other cookbooks. Oh yes, I love Recipezaar! Everyone sharing recipes from all over the World...what a wonderful way to connect with one another!
My husband and our sons add such love and laughter in my life. Most days will find us being quite silly, but it sure adds a little something extra-special to our lives. Amateur (or immature?!?) comedians...that would be us!
Mexican foods -- My husband and I love to eat at a restaurant in Dallas, called "Uncle Julio's". It is wonderful! Besides their delicious guacamole and cup of beans, it is also hard for me to resist their awesome signature "Swirl" drink.
As for one of my favorite entrees from Julio's, it would be the 'Pechuga de Pollo', which of course is just a big, juicy chicken breast marinated in garlic butter...I know, I know, that's simple enough to make at home.
Yes, that's true, but Julio's is a special place for my husband and me, so it makes everything even better no matter how simple it might be! (I do fix a smaller, yet not-as-special version of Pechuga de Pollo at home...since we live three hours from Big D!)
Even our son, my mom, brother, and sister-in-law also enjoy a trip to Julio's whenever possible. Well, now that I can't stop thinking about their food, I think it's time to take a road trip to Dallas... Ha Ha :)
My favorite comfort foods are things like chicken fried steak with mashed potatoes and gravy; fried potatoes, good ol' brown beans, fried okra, and cornbread; meatloaf and mashed potatoes, macaroni and cheese, corn on the cob, and tossed green salad. I also love grilled hamburgers and skillet fries; and filet steaks with baked potato and salad. Will post more...getting hungry as I think of it all!
My Granny's Sweet Tea...sigh...I'm shocked that I don't become a diabetic just thinking about it. It is hands-down the best sweet tea (IMO), but I can't drink as much as I would like to! (Yep, I need to post the recipe, and will do it sometime.)
Breads and sugary stuff - carbs, carbs, carbs...is my big enemy...aarrrghh! Major carb addict here. Oh how I love 'em, but can't have much of 'em!
