    Reviewed Roasted Roots

"For the root vegetables, I used 6 small beets, 4 rutabagas, and 2 potatoes. To season, I used 2T roasted garlic olive oil and 1T ranch dressing mix. I placed everything in a large bowl, put the lid on top, and shook to coat the veggies with oil and ranch. The potatoes were excellent! The beets and rutabagas were tastier than usual, too. Those two a..."

Reviewed Arugula & Chicken With Pasta

"I used penne instead of linguine, less chicken (typical for me), and less garlic (unusual for me, but that's a lot of garlic! and I still thought the garlic flavor was strong), and it was YUMMY! I steamed and chopped the arugula before adding it, and I was surprised how this dish completely took down the bite of what was more-peppery-than-usual aru..."

Reviewed Low Fat Country-Style Breakfast Casserole

"This is tasty, and thank goodness was very easy to make dairy-free (I used soy milk). I think the hash brown potatoes made it a bit dense, though; next time I'll try those as a side dish or adding about half as many. I added 24 grape tomatoes and 8 small sweet peppers, all diced, this time, and I think it could use twice as many vegetables next tim..."

    Reviewed Cream Filling

"This filling just didn't work out for me. The flour and milk got too thick (I probably needed more milk, but I didn't want it to be runny), and whereas it did whip together nicely using an electric mixer, it just didn't live up to my hopes. I wanted to make "Hostess" cupcakes, so I made a batch of http://www.food.com/recipe/dark-chocolate-cake-2496..."

    Reviewed Peanut Butter Cookies

"I used mostly crunchy peanut butter (the rest smooth - both "just peanuts" natural pb), but I left them in the oven after the baking time was up (not on purpose - I have small children!) so the cookies were slightly dry. I like that this is NOT a flourless pb cookie because the flour soaks up the inevitable grease from the peanut butter. I topped m..."

Reviewed I Can't Believe There's No Dairy in This Green Bean Casserole!

"I left out the margarine (got my onions softer in the microwave), flour, and most of the soymilk; I used frozen green beans instead of canned; I added a diced red bell pepper to the green beans for visual interest, and I added dressing mix to the mushroom mixture for an extra kick of flavor.

    Yum, yum, yum!

    The mushroom mixture did..."

    About Me

I'm married to a great guy (from Wisconsin, so beer is a food group) and we have two wonderful sons. The oldest is 6, had a rough time with colic for the first 4 years, and is a picky eater to put it mildly. The youngest is 3, and had allergic colitis until 2 that was triggered by milk, soy, egg, and barley (casein, soy protein, albumin, and hordein). Thankfully he's not allergic to wheat! Oh, and I'm lactose intolerant! I have friends with other allergies, so I'm always looking for tasty recipes that DON'T contain forbidden foods. I love RecipeZaar because I can search for recipes WITHOUT those ingredients, and because the reviews are great.

    Favorite Foods

My all-time favorite food is salad (lots of lettuce / spinach, with bell peppers, tomatoes, carrots, and other tasty veggies) with fruit salad coming in after that.
