"I was looking for a tasty use of leftover artichoke hearts (other than my usual pasta salad) from making my "everything" pizza. I wanted mashed potatoes with an accent, so I doubled the amount of potatoes using mostly Red Bliss with two purple potatoes. I skipped the sour cream, and used colby cheese instead of parmesan. Really quite tasty!"

"I used fat-free "bisquik" that I made, and I didn't use any butter. It was a little bland, but it was quick and easy to assemble. "I used apple cider vinegar, garlic powder, and oregano parsley (what I had). I put in at least twice as many multi-colored bell peppers! To up the tang (white beans are quite plain), I added quite a bit of pickle brice, and a small scoop of finely chopped dill pickles. I ate mine with a side of toast for some crunch. I have two wonderful sons. The oldest is 7, had a rough time with colic for the first 4 years, and is a picky eater to put it mildly. The youngest is 4, and had allergic colitis until 2 that was triggered by milk, soy, egg, and barley (casein, soy protein, albumin, and hordein). Thankfully he's not allergic to wheat! Oh, and I'm lactose intolerant! I have friends with other allergies, so I'm always looking for tasty recipes that DON'T contain forbidden foods. I love RecipeZaar because I can search for recipes WITHOUT those ingredients, and because the reviews are great.
My all-time favorite food is salad (lots of lettuce / spinach, with bell peppers, tomatoes, carrots, and other tasty veggies) with fruit salad coming in after that.
