New Topic Rum baba molds? in Cooking Q & A

"Hi all! It seems like I always end up here around Christmas every year. :P

So, I am planning on making a rum baba. Previously I always just used a bundt cake pan, but my father has belly-ached that it's just not the same as having the little single serve ones.

My question is which pan material is best for rum baba? Stainless s..."

New Topic Storing Milk Chocolate FLORENTINE COOKIES? in Seasonal Topic of the Month: CAKES, COOKIES & CANDY

"Hi all. I recently tried my hand at these Florentine cookies, which I was excited about because I've had them since I was a kid from the Italian bakeries, but didn't realize how easy they are to make!

I think I was fairly successful in making these (except the first batch which spread way too big! :P

Anyway, I remember these cookies as be..."

New Topic Runny Cannoli Filling! in Italian Cooking

"Okay, I'm at the end of my rope with this. I've had so many problems over the years with cannoli filling, and I still can't get it right. :(

    The recipe I used:

    2 lbs drained ricotta cheese
    2 cups confectioners sugar
    2 tsp vanilla
    1 tsp orange zest

Seems simply enough, right? Okay, first, I did take my ricotta and put in in cheese c..."

Reviewed Pasticciera Cream (Italian Pastry Cream )

"I made the chocolate version of this. It came out okay, but it tasted as if it were under sweetened. This might be partly due to my not knowing what type of baking chocolate to use since it doesn't specify (I ended up using one ounce of unsweetened and once ounce of semi sweet).

I ended up adding at least another 3 tablespoons or more ..."

    About Me

Not much to tell really. I'm here because I enjoy cooking, and I've found this site to have the best variety of recipes with helpful reviews that help in terms of modification and choice.

When I'm not cooking I'm probably writing, reading, hiking, or watching movies.

    Favorite Foods

I like almost everything. I'm not very adventurous when it comes to "sweet breads," or other internal organs. Similarly, I'm not a huge fan of raw food, though I will try it at least once.

My absolute favorites, in terms of region, are Italian, Mexican, and Southern.

More than likely, my favorite food is whatever I'm craving that particular day.
