"This cake was amazing!!! I did make a few changes though...I used 1 cup whole wheat flour, and 1 cup unbleached... used 1/2 the oil and added applesauce for the rest and used Sucanat instead of the sugar and omitted the nuts...The center didn't fall at all.. it raised and the taste was amazing... definitely the best carrot cake I ever had! Moist..."

"It was good but a bit bland for our family... So I added a few things:garlic powder, oregano, basil, worcestershire sauce and a can of Garlic Tomato paste to add more a more rich tomato taste. I also used brown sugar instead of white."
