"Oh Aarti...these are fantastic!! I eat regular falafels and often thought about how dry they are sometimes. I was so eager to try these. They really are so soft and moist in the center and full of flavor! Since my grocery didn't have shallot I used two scallions. I also added just a little fresh shredded horseradish. Because I don't like mint I quickly threw together what I call a lazy version of tzatziki sauce: yogurt, salt, pepper, chopped parsley, a dash of red wine vinegar (I prefer that instead of lemon juice) and garlic powder. I didn't have cucumber for the tzatziki but for this it wasn't necessary. I really like these much, much more than the regular falafels. I prefer to eat these by themselves and not in a sandwich so I just dipped them in the tzatziki. I will make these again and again and again...
I also made the Moroccan carrot salad as a side to the Pea-lafels and that was great too!!"
