"Great recipe, but because of the low protein content it's not Atkins friendly. Unfortunately, I'm just going to have to give it up. I've found, though, that if I take water and place it in a glass, add a scoop of protein powder, and stir, that it becomes Atkins approved. Would this work as a substitution in this recipe?"

I'm a professor of Computer Science with a long time love of food. Unfortunately, I loved food so much I became morbidly obese. Last year, I had a Vertical Sleeve Gastrectomy, where they cut away about 2/3 of my stomach. Since then, I've lost over 120 pounds and am no longer overweight. I feel a lot better!
However, there's a trade off here. With my new stomach, I can only eat about the same amount as a 3-5 year old child. I also have very high protein needs. Because of this, I've had to reinvent recipes that I've loved in the past, to make them more friendly to my "pouch". I hope you like them!
