I'm married to a great man, and almost 3 years ago we had our first child, Dylan. Being a mom is great, but as I teach English, and train for half marathons, I feel like my time is torn between my family, my students, and training. I'm always looking for great recipes to make my family happy; I know that sounds so 1950's, but I swear I'm a feminist. One of the biggest priorities for me is to not spend all day in the kitchen and instead spend more time with my family. The other is to create healthy recipes that taste great and make me feel good.
In addition, my family has a few food complications requiring me to be creative. My son is allergic to eggs, peanuts, and tree nuts. My husband is allergic to shellfish and poultry (I know... weird!). Because this limits some of our options, I'm always looking for new ways to give us some variety. I'm also always looking for ways to adapt classic recipes so my family can eat them.
I love trying different ethnic foods, my favorites being Indian and Vietnamese (at least right now! Sometimes I get on kicks and crave certain foods).
Currently, my favorite cook is Elie Kriegar from Food Network's Healthy Appetite. I've tried most of her recipes and they are all delish (and good for the body)!
