Hi folks. I'm relatively new to OAMC, and found something that makes my life a breeze when it comes to casseroles and such. I'd like an opinion on the idea :idea: just to see what folks think of it, and if it's something i should continue to do.I got a set of silicone baking pans, an 8x8, a bread pan, and a muffin pan as a gift and thought they might make freezing easy. We use the muffin pans for freezing things like chipotle peppers in adobo (I can never use a whole can at once, so we put 4 peppers in each cup then top with the sauce.) I put them in the freezer for a couple hours, then pop them out and put them in freezer bags. I found i can do this with casseroles too in the 8x8. I have a recipe we call "not lasagna" because well, we don't know what it is, but it's not lasagna! It's basically everything that goes in a traditional lasagna except the noodles. For the pasta, I use elbow macaroni. I cook them up, brown the beef, toss it all together with the sauce, cottage/ricotta cheese, seasonings and mozz, then pack it in the 8x8 and freeze it over night. Next day, I pop it out and vacuum pack it.Lol, it's probably already on here, but I couldn't find it, so thought I'd share.
