I'm a US citizen, currently living in Limerick, Ireland, attending graduate school at the University of Limerick. I'm a soprano, and my Master's is in Ritual Chant and Song. When I'm not buried in schoolwork - well, even when I am - I love to cook meals with my husband. We're avid foodies, and Ireland is an amazing place for a foodie! We spend our Saturdays going to the Limerick Milk Market to buy local produce.
My mother passed in April this year and she insisted on me learning how to cook with her, so I spent my childhood in the kitchen beside her. Cooking is a wonderful way to remember her. One of the prized posessions I brought to Ireland was her handwritten cookbook.
My husband and I are pescetarians, meaning the only meat that we eat is fish, and we don't eat a lot of it. We try to cook as many vegan meals as possible. Kale is our absolute favorite green - we love making raw kale salads. We love Mexican food and that's definitely something we miss being over here, but we have Fajita Nights every so often, and invite everyone over to have veggie fajitas with us, and my famous guacamole.
