Shared Recipe Peanut Butter and Apple Oatmeal Breakfast Bars
"I rarely cook anything for breakfast. A typical breakfast for me consists of a whole wheat bagel thin with peanut butter and honey, some days I top it with sliced bananas. On the side I generally have a glass of V8-Fusion juice and a cup of tea. In the spirit of the Healthy Eats January Challenge, I thought I'd whip up a healthy, easy and quick (on..."

Shared Recipe Kale Dumplings
"The only context I have ever thought of a dumpling in is that of a Chinese dumpling. So when I stumbled upon a recipe in Vegetarian Planet for Spinach Dumplings, I definitely raised an eyebrow. Welcome to Simple Food Healthy Life. I am a twenty-something, newly married, dog mom, law degree holding, licensed attorney. Like so many others, I have found myself unemployed since graduating law school. Simple Food Healthy Life is my escape into my passion: the world of cooking and baking healthy foods and not-so-healthy desserts.
Over the past year I have transformed my exercise patterns, diet, and thoughts about the food I consume. While I don't follow any one school of thought, I do eat primarily vegetarian, organic foods. I'll throw meat into my diet a few times a month and always finish my night off with dessert in some form. I ran my first half marathon in May 2011 and include the gym in my daily routine.
I have just relocated to Stamford, Connecticut, where I will continue cooking and baking my way through unemployment, working to turn a passion into a career.

"Eggplant is a go-to ingredient for me. It is such a versatile food and can be used in almost any course. It bursts with flavors, regardless of whether it is roasted, baked, or sauteed. The eggplant used in this recipe is no exception. Roasting the eggplant with chickpeas, onions and a blend of cumin, nutmeg and sea salt resulted in a fabulous, arom..."
