    Reviewed Chickpea Salad Sandwich

"This is a tasty change of pace, and for me was an unexpected combination of flavors. I liked the walnuts especially; for me I want that much texture (my chickpeas were homecooked and VERY soft and thus mashed a lot) and would probably not want to sub sunflower seeds. Thanks so much for posting! Made for Best of 2012 tag."

    Reviewed Savory Oven-Baked Beef Stew

"Delicious, warming comfort food here! I needed to make a double batch, so I did one in the oven and one on the stovetop. Both were tasty, but the texture of the oven version was so much better! The meat was meltingly tender, the veggies were perfect, and the "gravy" was just right. I threw in some green beans because I wanted to use them up and I i..."

    Reviewed Cauliflower Mashed Potatoes

"I can't even get over this...how delicious, nutritious, and EASY was this?? Nobody had a clue it was cauliflower until I told them, and at that point they were too busy shoveling it in to care. It sort of defeats the purpose of a low-cal dish to lick the pan clean, doesn't it LOL?? I have to admit I had butter at the ready to mix in to get that mas..."

    Reviewed Salmon-Rice Pie

"This was just....awesome. Made as written, except using freshly broiled salmon and milk for all of the liquid instead of canned salmon. The crust was great, the filling was delicious and nutritious...who could ask for more??! Made for Best of 2012 tag, and you can bet it will turn up in my cookbook for 2013!"

    Reviewed Vegetarian Enchilada Casserole Recipe

"Mmmm...cheesy, gooey goodness! I was tempted to add beans but decided to make this as written the first time, and it didn't disappoint. I used a combination of red and green enchilada sauce, which was fun and tasty :). Thanks for posting! Made for Best of 2012 Tag."

    About Me

I live in Knoxville, TN with DH, my beautiful kids, and the two most spoiled cats on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!!

To explain the name: I was veg for 11 years, vegan for 1. While my diet has changed, my brother-in-law's nickname for me (smelly vegetarian) has always stuck.

Also...thanks a million to my Zaar fairy godperson :)!!!

    Favorite Foods

I would like to say my favorite dish to cook is something fancy, but to be honest nothing makes me happier than baking cookies! I am known for baking when I'm stressed, so I guess I'm famous at work for bringing in random baked goods. I usually try to health things up a bit, too, so people usually expect some kooky ingredient like tofu or flax LOL.
