    Reviewed Smashed Tater Pancakes

"Yum!! We absolutely loved these. Instead of using leftover mashed potatoes I just boiled a few, peeled off the skin (mostly, we left some of it), and mashed the flesh. What a wonderful change of pace from roasted potatoes! My family has already asked me to make sure these stay in the rotation :). Made for Veg Swap January 2012."

Reviewed Super Easy: Zucchini Side Dish

"Mmmm, I already love zucchini madly and this recipe really takes it to the next level. I love how the veggie soaks up flavors and gets a lovely melty texture. I, too, used less dill out of personal preference. Thumbs up all around the table--thanks for posting! Made for Veg Swap January 2012."

Reviewed Mom's Extra Sharp Mac and Cheese

"Mmmm, comfort food at its finest! I added more macaroni and some hefty shakes of salt and pepper, and we gobbled this up faster than you can blink. I love how easy it is to put together, too. I will say that I used a combination of cheeses, and one of them (I think the reduced fat cheddar?) turned white, which was really strange to me. The flavor w..."

    About Me

I live in Knoxville, TN with DH, my beautiful kids, and the two most spoiled cats on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!!

To explain the name: I was veg for 11 years, vegan for 1. While my diet has changed, my brother-in-law's nickname for me (smelly vegetarian) has always stuck.

Also...thanks a million to my Zaar fairy godperson :)!!!

    Favorite Foods

I would like to say my favorite dish to cook is something fancy, but to be honest nothing makes me happier than baking cookies! I am known for baking when I'm stressed, so I guess I'm famous at work for bringing in random baked goods. I usually try to health things up a bit, too, so people usually expect some kooky ingredient like tofu or flax LOL.
