"By itself, you might think this soup tastes slightly bland. Rather than add salt, try it with some good quality oyster crackers. The best ones I've found are Olde Cape Cod oyster crackers. Kind of wish *all* the ingredients had been in the ingredients section so I wouldn't be surprised at the last minute that the Lipton Chicken Noodle soup mix was needed. "Not a big onion soup fan, but tried this on a whim. Surprisingly good. The fresh toasted bread and mozzarella cheese makes it.Next time I'd only use 1/2 a teaspoon of sugar, and perhaps not quite so many onions."
"Fantastically better than the Progresso Minestrone I'm used to. Big wonderful chunks of tomatoes and zucchini and carrots. Just the right amount of beans (not too much). Only recommendation is a slightly more salt. I guess you wouldn't need to add more salt if you used stock instead of water though."
"Pretty good. The red peppers definitely add a nice flavor. Bit salty though - perhaps I used a bit too much bouillon. Recipe does call for *small* bouillon cubes. Puree is not necessary unless you really don't like a good chunky soup."
