     |  By Upper Crusty

"When I saw the title of this, I was curious... you see, I've been married 35 years to my hispanic hubby, and discovered a few years ago that everything his mama put in guacamole already existed in bottled chunky salsa : We "happen" to prefer either La Victoria, Rosarita, or Herdez brands, since they include cilantro and "don't" include funky non-..."

"Oh my goodness, this risotto is to die for!! Yeah, it takes an hour of work start to finish, but it's just as well or I'd eat it far too often : Don't change a thing on this one, unless you're going fat-free these days.. then you can probably delete the marscapone - but I'm not positive, cuz there's no way I'm leaving t ..."

"Hubby doesn't care for green olives, and declared he wouldn't like this because of it... LOL He LOVED it, ate every bit, green olives and all *s*, and says the cooking method is awesome since it cooked the fish perfectly. Only tweak I made was to saute the fennel and onion for a couple minutes in a bit of butter & oil before topping the fi ..."

"Mexican hubby watched me making this, shaking his head.. "Chorizo.. and shrimp?? I don't know.." We live in a small town in Montana, couldn't find fresh poblanos anywhere, so I thought, what the heck, he wouldn't eat the pepper anyway, I'll just substitute roasted red peppers.. and know what? HE LOVED IT, went back for seconds and announced, "THAT ..."

"Made this for dinner tonight, and it's perfectly seasoned. I was nervous about the chorizo, but no worries. The one thing I added to the celery/carrot/onion/garlic mix on the stove was corn cut off the cob of two small ears. Thanks for a keeper recipe!"

"Well, I chose the "low" setting on my flat-top electric range, and there was no way the potatoes were done in 30 minutes. Kicked it up a notch to finish, and the potatoes was YUM! Next time I'll start with the setting a bit higher."

"Only thing I chaged was I used less butter in the crust and baked it for 5 minutes (then cooled before adding the batter. Hubby & I love pumpkin pies, but this Thanksgiving I decided to give this a whirl. We both agreed, this is FAR tastier than a traditional pumpkin pie!
