    Reviewed Eggplant Parmesan

"You know what, can I just rave about how good this recipe is. Use dried herbs if you don't have fresh, it doesn't matter, it's excellent. I peel the eggplant, I've never tried it with the skins. If you want to serve spaghetti noodles with this, you may want to double the sauce recipe.

    About Me

I have the privilege of doing what I love: Having a floral business out of our historical, Italianate home in a special little town. Now if we could add a little greenhouse/cafe' to it, our dreams would be reality. I'm passionate about living the Christian life, being a wife, mom and business woman. I have been homeschooling 5 kids forever! What a blast; what a privilege! Cooking, landscaping, interior decorating are 3 more of multiple passions. Cookbooks used to be an obsession, but after so many years of cooking, I'm gladly to the point that I can throw things together w/o them to survive happily. Now collecting recipes on this sight is a bonus! I have a newlywed daughter, and I find recipes for her! It's an excuse to take a break from work!
One pet peeve is that parents are not teaching their kids to eat a great variety of nutritional foods. Their palates are soooo limited! I think this is a HUGE mistake! Enough said!

    Favorite Foods

I like to cook anything I like to eat! My family gets excited when we have nachos or Aztec chicken salad (my Applebees copycat). My favorite restaurant is The Mexican Connexion in Hastings, MI. I challenge anyone to come up with better Mexican food than theirs! (Or to provide me with their secret recipes!) I would love to be better at making fantastic Mexican, Chinese and Thai food. I'd also like to learn to make the marvelous beverages ie. lattes etc. (like Barnes & Nobles have) that are so popular these days. Those fancy bottles excite me!!
